Bites from the Dietician

Eating more vegetables is one of the simplest ways to boost your health. Just 2–2½ cups a day, especially a mix of colors, can strengthen your immune system, protect against chronic illness, and keep your body fueled with essential vitamins, minerals, and fiber.

This article highlights six nutrient-packed veggies — broccoli, onions & garlic, asparagus, red cabbage, leafy greens, and sweet potatoes — and explains how each one supports everything from brain function to gut health. You’ll also find preparation tips to maximize the benefits of their powerful antioxidants and anti-inflammatory compounds.

What We've Been Cooking

Thank You to Our Catering Team for a Century of Celebration

Salisbury University’s Centennial Gala was a night to remember — and much of its success is thanks to the incredible work of our Catering team and supporting dining staff. Their creativity, professionalism, and attention to detail helped transform this historic evening into an unforgettable celebration.

Guests began the evening with a cocktail hour featuring our signature Centennial drink, The Great “Gulls”by — a refreshing mix of lemonade and gin, topped with a whimsical smoke bubble. Hors d’Oeuvres were butlered throughout the crowd, from salmon mousse on endive leaves and stuffed mushroom caps to spicy citrus mango shrimp and watermelon-feta bites with mint and balsamic glaze.

Dinner was equally memorable: a grilled pear and arugula salad with shaved parmesan crisps and balsamic drizzle, followed by a perfectly prepared filet topped with Old Bay crab béarnaise, paired with duchess potatoes, asparagus, and patty pan squash. The evening concluded with an elegant dessert display, offering guests a sweet finish to an already spectacular evening.

To our Catering team and the many dining staff who supported this event: thank you. Your hard work, talent, and hospitality made the Centennial Gala not only a celebration of 100 years of Salisbury University, but also a shining example of the excellence within University Dining.
